Usein kuu­lee sanot­ta­van “Olet sitä mitä syöt”, mut­ta ayur­ve­da esit­tää asi­aan uuden näkö­kul­man: Olet sitä mitä sula­tat. Näin ollen, oikean­lai­sen ruu­an syö­mi­nen ei yksin rii­tä kehon ravit­se­mi­sek­si , vaan kes­kei­ses­sä ase­mas­sa on vah­va ja oikein toi­mi­va ruu­an­su­la­tus. Jot­ta pys­tyi­sim­me hyö­ty­mään syö­mäs­täm­me ruu­as­ta, kehon täy­tyy ensin pilk­koa se eli­mis­töl­lem­me sopi­vaan muo­toon. Ruu­an­su­la­tuk­sen tuli, eli ayur­ve­dan kie­lel­lä agni, on vas­tuus­sa sekä ruu­an sulat­ta­mi­ses­ta, kehon läm­pö­ti­lan sää­te­lys­tä että aineenvaidhunnasta.Agni on tulie­le­men­tin ilmen­ty­mä kehos­sa. Sen kes­kei­sin vai­ku­tusa­lue on ruu­an­su­la­tus ja soluai­neen­vaih­dun­ta. Vat­sa­ha­pot ja ruu­an­su­la­tus­nes­teet ent­syy­mei­neen ovat agnin ilmen­ty­miä. Lisäk­si agnin teh­tä­vä­nä on pitää kehon läm­pö­ti­la vakaa­na 37°C:n tun­tu­mas­sa, ulkoi­sis­ta olo­suh­teis­ta ja syö­mäm­me ruo­an läm­pö­ti­las­ta huolimatta.Lisäksi agni ilme­nee myös aineen­vaih­dun­ta­na (meta­bo­lia) kehon kudok­sis­sa ja solu­ta­sol­la. Mie­len tasol­la agni tuot­taa älyk­kyy­den ja erot­te­lu­ky­vyn. Vah­va agni antaa tah­don­voi­man ja päät­tä­väi­syy­den ja sää­te­lee elinvoimaisuutta.
